“This is a take on queso fondido. It’s like very cheesy, stretchy, gooey mashed potatoes with a meaty kick from the spicy chorizo and a crunch from the potato chips,” says theCravingsfounder.

Teigen recommends buying all pre-grated cheese at the store. “This will save you time and a messy clean up,” she says.

And if you need to keep it warm before the game? “Use a grill!” she suggests.

The Kansas City Chiefs and the San Francisco 49ers will face off in Super Bowl LVIII, airing on CBS on Feb. 11 at 6:30 p.m. ET.

Chrissy Teigen’s Cheesy Mashed Potato & Chorizo Dip

1½ lbs. Yukon Gold potatoes, peeled and cut into 1-in. pieces

¾ cup (6 oz.) cubed unsalted butter

¾ cup heavy cream, warmed

8 oz. Gruyère cheese, shredded (about 2 cups)

8 oz. low-moisture mozzarella, shredded (about 2 cups)

2 tsp. kosher salt

1 tsp. black pepper

6 oz. fresh Mexican chorizo, casing removed and crumbled

8 oz. shredded pepper jack cheese (about 2 cups)

Potato chips for dipping

2.Pass potatoes through a ricer back into warm pot or, alternatively, mash potatoes in warm pot, with a potato masher. Add butter, warmed cream, Gruyère, mozzarella, salt and pepper; cook over low heat, stirring constantly, until cheese and butter have melted and mixture is well-combined, about 3 minutes. Transfer potato mixture to a 2-quart baking dish; set aside.

3.Cook chorizo in a medium skillet over medium high, stirring occasionally, until browned and cooked through, 5 to 6 minutes. Remove from heat; set aside.

4.Sprinkle pepper jack evenly over potato mixture, and then top evenly with cooked chorizo. Bake, uncovered, in preheated oven until cheese has melted and mixture is hot and bubbling, 10 to 12 minutes. Serve hot with potato chips for dipping or crumbled on top.
